Baked Burbot (Ling Cod) with Onion Rings

This is an easy 1 hr from start to finish dinner on a busy night. Very mild flavored fish best served with a side salad and either a baked potato for ease of cooking or your favorite rice dish.

2 lbs. Ling Cod or any mild flavored white fish

Cup French's Fried Onions, crushed
1/8
teaspoon pepper and or salt
  1. Turn oven on to 400 degrees. Thaw planks thoroughly; pat dry. Cover a cookie sheet with parchment; sprinkle w/ pepper & maybe salt, if you like.
  2. One half of the French's Fried Onions, crushed, sprinkled on the pan. Lay fish on top of crushed onions and add more Onions to the top of the fish. Bake till done.
  3. Serves 2 well or 4 smaller portions.
