Baked Buffalo Frittata

Wake up your taste buds with this spicy, cheesy egg dish, hot out of the oven in 35 minutes.

Ingredients

tablespoon butter or margarine

eggs
2
tablespoons Buffalo wing sauce
1
cup shredded Mexican cheese blend (4 oz)
2
tablespoons crumbled blue cheese
2
stalks celery, cut into 3-inch pieces

Directions

  • 1 Heat oven to 375°F. In 8-inch square (2-quart) glass baking dish, melt butter in oven.
  • 2 In medium bowl, beat eggs and Buffalo wing sauce until well blended. Stir in cheese blend. Pour egg mixture over melted butter in baking dish.
  • 3 Bake 18 to 22 minutes or until set. Sprinkle frittata with blue cheese. Serve with celery pieces.

Expert Tips

If you really like spicy foods, choose a hot variety of Buffalo wing sauce, and then drizzle with 2 or 3 additional tablespoons sauce after baking.

If desired, use an ovenproof skillet instead of the baking dish.
