Baked Apple Spice Doughnuts with Cinnamon Glaze

Ingredients

Doughnuts

cups Bisquick® Complete pancake & waffle mix
2
tablespoons granulated sugar
1/4
teaspoon ground cinnamon
1/8
teaspoon ground nutmeg
1/3
cup milk
1/3
cup applesauce
1
teaspoon vanilla

Glaze

1/2
cup powdered sugar
1/4
teaspoon ground cinnamon
1
tablespoon milk
1/2
teaspoon vanilla
Candy sprinkles, if desired

  • 1 Heat oven to 425°F. Spray mini doughnut pan with cooking spray.
  • 2 In medium bowl, mix all doughnut ingredients with spoon until blended. Spoon batter into pan, using about 1 tablespoon for each doughnut.
  • 3 Bake 6 to 8 minutes or until toothpick inserted near center comes out clean. Remove doughnuts from pan to cooling rack; cool 5 minutes.
  • 4 Meanwhile, in small bowl, mix powdered sugar, 1/4 teaspoon cinnamon, 1 tablespoon milk and 1/2 teaspoon vanilla with whisk until smooth.
  • 5 Dip tops of doughnuts in glaze; top with sprinkles. Serve warm.

These were pretty good. I didn't have a problem with the batter being dry. The only change I made was to add about a tablespoon of dark brown sugar and used a half cup of applesauce. Didn't have a doughnut pan, so used a mini muffin tin. It made 12 and I had just enough glaze for the tops. The glaze is a must, and adding the extra sugar crystals to the top really add to the flavor.

Made these this morning and found them to be disappointing. Very bland and way to dry. Had to add an egg, extra applesauce and milk. I would suggest adding applie pie spice as well. Not enough flavor. Also, double the glaze recipe. Not enough for a dozen donuts.

I don't have a donut maker, so I made pancakes with this--I added 1/4 cup more applesauce and about 1/2 cup milk to thin the batter (I started with 1/4 cup and the first pancakes were very thick, so I just poured in a bit more milk). It made a dozen pancakes--my family usually eats 6-8 pancakes total, but these were all gone this morning! Delicious.
