Heart Healthy Cookbook Apple Oatmeal

Ingredients

  • 2 2/3 cups old-fashioned oats
  • 1/2 cup raisins
  • 1/3 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 4 cups fat-free (skim) milk
  • 2 medium apples or pears, chopped (2 cups)
  • 1/2 cup chopped walnuts
  • Additional fat-free (skim) milk, if desired

Steps

    Heat oven to 350°F. Mix oats, raisins, brown sugar, cinnamon, salt and 4 cups milk and the apples in 2-quart casserole.

    Bake uncovered 40 to 45 minutes or until most liquid is absorbed. Sprinkle walnuts over top. Serve with additional milk.

  • One serving of this oatmeal provides many nutrients: both soluble and insoluble fiber, iron, calcium, folic acid and that good-for-you fat, Omega-3, from the walnuts! Keep leftovers on hand and reheat for another day.
