Who said you can’t have mashed potatoes in the summer? This mash-up of roasted garlic mashed potatoes and lemony avocados makes the perfect side dish for a summer barbecue. Great with chili-lime grilled chicken!

Water called for on potatoes box for 1 pouch

medium avocados, pitted, peeled

teaspoons fresh lemon juice
1/4
to 1/2 teaspoon hot pepper sauce
Chopped fresh cilantro, if desired
  1. Make 1 pouch potatoes as directed on box, omitting butter and milk.
  2. Meanwhile, in medium bowl, mash avocados; stir in lemon juice and pepper sauce.
  3. Stir avocado mixture into potatoes. Garnish with cilantro.
