Aunt K K's Black-Bottom Cupcakes

A yummy combination of chocolate cake from scratch and a cream cheese center - my favorite cupcakes, and so easy!

Ingredients

oz. cream cheese (softened)

cup sugar

tsp salt

oz. semi-sweet chocolate chips

cup flour

cup sugar
1/4
cup unsweentened cocoa
1
tsp baking soda
1/2
tsp salt
1
cup water
1
tablespoon vinegar
1/3
cup vegetable oil
1
tsp vanilla extract

Directions

  • 1 Preheat oven to 350 degrees. In one medium bowl combine ingredients for filling: softened cream cheese, egg, sugar & salt. Beat well and stir in chocolate chips. Set aside.
  • 2 In 2nd medium bowl sift dry ingredients for chocolate cake: flour, sugar, unsweetened cocoa, baking soda & salt. Mix in: water, vinegar, vegetable oil & vanilla extract.
  • 3 Fill 18 cupcake paper cups 1/3 full of chocolate cake mixture. Top with a heaping tablespoon of cream cheese mixture.
  • 4 Bake for 25-30 minutes.

I like to set the egg out with the cream cheese so they are both room temperature. Baking time really varies - keep a close eye on them as they bake.

Black-Bottom Cupcakes are one of my all-time favorite desserts! I was excited to try this recipe as I had never made them from scratch before. (I usually use box cake) I was NOT disappointed at all with the results! They turned out DELICIOUS and they were very easy to make! I made mini cupcakes and backed them for 20 minutes instead of 25-30 and they were perfect! THANK YOU this was AMAZING! I will use it again!!! ;-D

They were better then I thought they'd be when they came out of the oven. The cream cheese filling did seem to want to mix with the batter on top, but there was also places where it sank into the center or the cupcake. The picture above may be slightly misleading for most, but the results were still delicious.
