cup granulated sugar

cup shortening

extra ripe bananas* (about 1 cup)

eggs, slightly beaten

cup chopped walnuts
  1. Sift dry ingredients together in large bowl. Mix in shortening with hands, set aside.
  2. In medium bowl, beat bananas until soft. Stir in beaten eggs. Add banana mixture to dry ingredients, beat 1 to 2 minutes. Stir in nuts if desired. Pour batter into a greased loaf pan.
  3. Bake at 350 degrees for 40 - 45 minutes, or until a toothpick inserted in center comes out clean. Turn out onto wire rack while still hot.
  4. Note: Use overly ripe bananas for maximum flavor, or add 1/2 tsp banana extract.
