Ingredients

cups flour
1
tsp. baking soda
1
cup granulated sugar
1/2
cup shortening
3
extra ripe bananas* (about 1 cup)
2
eggs, slightly beaten
1/2
cup chopped walnuts

  • 1 Sift dry ingredients together in large bowl. Mix in shortening with hands, set aside.
  • 2 In medium bowl, beat bananas until soft. Stir in beaten eggs. Add banana mixture to dry ingredients, beat 1 to 2 minutes. Stir in nuts if desired. Pour batter into a greased loaf pan.
  • 3 Bake at 350 degrees for 40 - 45 minutes, or until a toothpick inserted in center comes out clean. Turn out onto wire rack while still hot.
  • 4 Note: Use overly ripe bananas for maximum flavor, or add 1/2 tsp banana extract.

Store overly ripe bananas in the freezer until ready to use, Then thaw in at room temperature. Be sure to peel thawed bananas over a bowl to cature the intense flavored syrup.
