tablespoons butter or margarine

small onion, chopped (1/4 cup)

tablespoon all-purpose flour

cups milk

cups shredded sharp Cheddar cheese (8 oz)

medium potatoes, peeled and thinly sliced (6 cups)

cup dry bread crumbs
Paprika, if desired
  • 1 Heat oven to 375°F. Grease 1 1/2-quart casserole with shortening or spray with cooking spray.
  • 2 In 2-quart saucepan, melt butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly; remove from heat.
  • 3 Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in 1 1/2 cups of the cheese until melted.
  • 4 Spread potatoes in casserole. Pour cheese sauce over potatoes. Bake uncovered 1 hour.
  • 5 In small bowl, mix remaining 1/2 cup cheese and the bread crumbs; sprinkle over potatoes. Sprinkle with paprika. Bake uncovered 15 to 20 minutes or until top is brown and bubbly and potatoes are tender.

these were wonderful! the only thing I did different from what the recipe stated was add half the potato slices in dish, then pour on half of the cheese sauce, then added the other half of the potatos and the rest of the cheese sauce on top -- that way the sauce is all the way through instead of just on top.

These are awesome! I made them gluten-free by switching out the flour for corn starch (which brought out the cheese flavor more so) and by omitting the bread crumbs.

LOVED this recipe! I didnt change much, i put some pepper jack chesse in with cheddar and i also mixed in some italian bread crumbs. Make sure to cut the potatoes thin. =) My new favorite potatoe dish.
