Directions

  • 1 Heat rice, lentils and 1 1/2 cups water to boiling in 2-quart saucepan; reduce heat. Cover and simmer 30 to 40 minutes, stirring occasionally, until lentils are tender and water is absorbed. Cool slightly.
  • 2 Mash rice mixture slightly with fork. Stir in cashews, bread crumbs, 2 tablespoons stir-fry sauce, the onions and egg. Shape mixture into 4 patties, each about 1/2 inch thick.
  • 3 Spray 10-inch skillet with cooking spray. Cook patties in skillet about 10 minutes, turning once, until golden brown. Remove patties from skillet; keep warm.
  • 4 Heat remaining ingredients except noodles to boiling in same skillet; reduce heat to medium. Cover and cook about 5 minutes, stirring occasionally, until vegetables are crisp-tender. Add patties. Cover and cook over medium heat 5 to 8 minutes or until patties are hot. Serve sauce and patties over noodles.

EXPERT TIPS

Expert Tips

Stir-fry sauce is available in many flavor variations from sweet-and-sour to teriyaki. Use your favorite to make this nutritious supper dish. If you don’t have stir-fry sauce, try bottled sweet-and-sour sauce instead.

Form the rice and lentil patties (do not cook) up to 24 hours ahead of time, and store tightly wrapped in the refrigerator.

Nuts are easier to chop when they are warm. Heat them either in a microwave oven on High for 2 to 3 minutes or in a conventional oven at 325° for 5 minutes.

The patties completely fell apart! It was as if I was cooking asian rice and lentil 'bits' in the pan. Too bad.... I had such high hopes!

This was a fantastic recipe. I made the lentil patties on their own and served with another side and they were still amazing. I was very generous with the cashews and added extra breadcrumbs to form a nice consistency for the patties before cooking. The last time I made these, I also added some grated carrots - my two toddlers devoured them!

I thought this was good and I will probably make it again. I used a teriyaki type stir fry sauce. As far as what I would change, I would make sure to have more warm stir-fry sauce on the side, to pour over the patties and possibly the noodles (however much an individual prefers). The patties were good, but some might like more of the sauce. I would also add more carrots and perhaps a little more celery. These don't come in until Step #4, but I found myself wanting more carrots and celery to kind of pour over the patties and the noodles. Instead of using an actual egg, I used egg beaters and that worked well. Overall, this is a good vegetarian-type meal. These patties would also work well with just a side of mixed vegetables.
