Creamy Asian Pork and Vegetable Stir-Fry

A classic skillet stir-fry simplified with a garlic cooking sauce.

Ingredients

lb to 1.15 lb pork tenderloin
2
tablespoons vegetable oil
1
package (12 oz) fresh California stir-fry vegetable blend (or other stir-fry blend)
1
pouch (9 oz) Progresso™ Recipe Starters™ creamy roasted garlic with chicken stock cooking sauce
3
tablespoons stir-fry sauce
1
cup cooked jasmine rice

  • 1 Cut pork into 1/2-inch medallions; cut each medallion into 3 strips. In 10-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Stir-fry pork in oil 5 to 7 minutes or until edges are brown and pork is just cooked through. Remove from pan; set aside.
  • 2 Add remaining 1 tablespoon oil to skillet. Stir-fry vegetables in oil 2 to 3 minutes or until crisp-tender. Add cooking sauce, stir-fry sauce and pork. Cook 1 to 2 minutes or until heated through.
  • 3 Serve with rice.

Prepackaged, fresh stir-fry vegetable mixtures are found near the packaged salads and are already washed, cut and ready to use.

Serve with soy sauce and/or crushed red pepper.

Freeze pork for 30 minutes for easier cutting.
