10-Minute Asian Coleslaw

Ingredients

Peanut Dressing

cup Italian dressing

tablespoons peanut butter

tablespoon soy sauce

Coleslaw

bag (16 ounces) coleslaw mix

can (11 ounces) mandarin orange segments, drained

small jicama (about 1 pound), peeled and cut into 1/2-inch cubes (2 cups)

cup peanuts
  • 1 In small bowl, mix all dressing ingredients with wire whisk until smooth.
  • 2 In large bowl, toss coleslaw mix, orange segments and jicama. Toss with dressing. Sprinkle with peanuts.

Expert Tips

You can also use 4 cups of shredded cabbage instead of the bag of coleslaw mix.
