I modified this recipe and didn't use the peanut butter of jicama, plus I used pistachios or sunflower seeds insted of the peanuts and it's the best! It's good whether it's still crunchy and freshly made or has rested overnight and the flavors have blended. Delicious!

Quick, easy, & cheap. I used crunchy PB as that was what I had, added about 1/2cup minced fresh onion & a bit of S&P.

Nice salad alternative. We get tired of lettuce and caprese salads. Didn't have jicama, probably won't go out of my way to buy it....any suggestions for a substitution other than the water chestnuts the I used? They worked just fine.

EXCELLENT!! I didn't have peanuts so I used slivered almonds and added a little crushed red pepper to the dressing to give it a kick. I also sprinkled on sesame seeds before serving. YUMMOLA! I'm going to make it next time with cooked chicken or shrimp for a summer main entree!
