Asian Chicken with Kumquat Sauce

I did not make the sauce to go with this recipe, but used the ingredients for the basting of the chicken. I liked that the soy sauce mixture made the chicken brown up nicely and the outside was crispy. The taste was good, for an asian inspired meal. Not my favorite flavor for baked chicken, but an easy go-to recipe for ingredients I know I have on hand.

This was great! I actually didn't have Fiber One cereal. I used what was at home (Kaski GoLean Puffs) and it worked wonderfully. I also didn't use buttermilk; I substituted Non-fat plain yougurt (the same amount) and it was still tasty!

When I tried this recipe the first time I made it exactly as it was printed. It was exceptional!. My son asked the second time to try dried peaches instead of kumquats. Although it was good, the kumquats win hands down!
