Asian Chicken Tenders with Zesty Lemon Sauce

Ingredients

boneless skinless chicken breasts (about 1 lb)

tablespoons soy sauce
1
tablespoon honey
1/2
teaspoon ground ginger
1/4
teaspoon garlic powder
1
cup Progresso® panko crispy bread crumbs
1/2
cup sweet-and-sour sauce
1/2
teaspoon grated lemon peel

  • 1 Cut each chicken breast across grain into 8 (1/2-inch-thick) slices. In medium bowl, mix soy sauce, honey, ginger and garlic powder. Add chicken; stir gently until coated. Let stand 20 minutes to marinate.
  • 2 Heat oven to 400°F. Line 15x10x1-inch pan with foil; spray foil with cooking spray. Place bread crumbs in shallow dish. Drain off any remaining soy sauce mixture from chicken. Toss chicken pieces in bread crumbs to coat; arrange in single layer in pan.
  • 3 Bake 5 minutes. Turn chicken; bake 5 to 7 minutes longer or until golden brown and crisp.
  • 4 In small bowl, stir together sweet-and-sour sauce and lemon peel. Serve chicken with sauce for dipping.

My husband made this for dinner (which I am thrilled about!) so if he can make it, anyone can make it! That's one perk - the simplicity. The only thing I was disappointed about was that the tenders were not as crispy as I hoped. I'll try to get more panko on them next time. This is great on a night when you need something quick.

It's not spectacular, but its good. I marinated the chicken for about 2 hours in the fridge & added a touch of salt & pepper to it. I added some dried thyme to the breadcrumbs too. They don't get real crunchy baking them in the oven... just a little bit. It's perfect for a quick, easy & good meal. Especially if you have kids!

Everyone in the family liked, which is not an easy task. "A nice break from the ones you always make, mom." I used 1.5 cups panko for 1.7 lbs chicken. There was plenty of marinade for that much meat. I drizzled the panko coating with sesame oil just before I put it in the oven. Next time I will add a sprinkle of salt. I used chili sauce and added diced pineapple (I was the only one in the family who would touch the sauce). PS I baked 15 minutes and didn't turn them over.
