Asian Chicken Salad

This is a wonderful summer salad. I used three chicken breasts, a little extra sugar, soy sauce and a little garlic powder as someone else suggested. I also added a little celery. It was a meal in itself.

This was pretty good. We used Spring Mix prepackaged lettuce and cooked the chicken with the onions and added fresh garlic to the chicken as it was cooked. Added extra veggies to the salad (red bell pepper and celery). Had to use chow main noodles (couldn't find cellophane noodles). Thought the dressing could be a little sweeter so next time will add a little more sugar maybe. Also added slivered almonds. Mmmmm. Will make again. Served with frozen egg rolls and sweet and sour sauce.

This is the first time I have made an Asian Chicken Salad. I always order them when I go out. I am glad to finally have a good recipe to make at home. I changed the dressing recipe a bit. I added more soy sauce and some garlic powder to add flavor. It tasted great after sitting in the fridge overnight.
