This is a definite keeper! I used real potatoes, though, but the subtle cheese and pesto flavors really are wonderful and I thought the red peppers would be a little over the top but they really complimented the flavors in the potatoes nicely.

Very very tasty! My only recommendation is to add a little more milk. Mine came out a little dry and I think that was due to the potato packages. They no longer make the 7.4 oz box, it is a little more now (like 8.2 oz). Next time I will account for this and it will be perfect!
