Ingredients

2 2/3
cups uncooked fusilli (corkscrew) pasta (8 oz)
1
jar (7 oz) roasted red bell peppers, drained, chopped
1
jar (2.5 oz) Green Giant® sliced mushrooms, drained
1
jar (6 to 7 oz) marinated artichoke hearts, undrained
2
tablespoons shredded Parmesan cheese
1/2
teaspoon pepper
2
tablespoons pine nuts
3
tablespoons chopped fresh basil leaves, if desired

  • 1 Cook and drain pasta as directed on package. Rinse with cold water; drain.
  • 2 Meanwhile, in large bowl, mix bell peppers, mushrooms, artichoke hearts (with liquid), cheese and pepper. Add pasta; toss. Sprinkle with nuts and basil.

Do you have one of those friends who's such a great cook-pretty much a gourmet that you're intimidated what to bring when invited to their house? I do-we were invited to join them for a 4th of July cookout and I decided to give this recipe a try...It sounded easy, but had a bit of "uniqueness" to it. It was a huge hit and even the hostess requested the recipe! I went on Kathryn's suggestion to add sliced grape tomatoes and I had dried basil on hand. This one's a keeper!

This was delicious, and very quick and easy to prepare. I added some halved grape tomatoes and used greek basil. Leftovers were great for lunch the next day, too!
