Lb Trimmed, Snow Peas

Tbs EVOO

Cup Cilantro
1/2
Cup Apricot Preserves

Tbs Soy Sauce

Tbs Lime Juice

Tsp Red Pepper Flakes

Lbs Jumbo Shrimp
  1. Cook rice. Bring a pot of salted water to boil; add peas & cook 4 mins. Drain & toss with cooked rice, EVOO, & cilantro
  2. Combine preserves, soy sauce, lime juice, & pepper flakes. Stir 4 Tbs of this mixture into rice. Cover & refrigerate till ready to serve.
  3. Reserve 2 Tbs of the apricot mixture, brush remaining mixture on shrimp, grill 2-3 mins per side.
  4. Serve with rice & reserved sauce
