To answer the question, "Just WHAT in Vanilla is considered Gluten?" I know the answer, but googled it anyway. It all depends on the type of alcohol that is used and if it contains caramel color, both of which may contain some form of grain in their processing. Someone posted on the celiac.com's G-free forum that, "all of McCormick flavor extracts are safe because they use synthetically derived alcohol." I would ere on the side of caution and call the company directly to make sure. I plan on making these cupcakes for my mom for Christmas because she is gluten intolerant.

For those asking if you can use regular ingredients...A GF cake mix only makes a 8 or 9" cake (single layer). If you use a regular cake mix, you'll have too much mix. I haven't made these, but I've made other GF items with the Betty Crocker GF mix and with personal additives (more chocolate, applesauce, sour cream, etc., it makes for delicious baked items...and I am not a GF person. I sell cakes.

I loved these cupcakes. I always cream about a cup of cake mix with the butter, then add the eggs one at a time. I also used unsweetened apple juice instead of water. I used a teaspoon of nutmeg, 2 teaspoons of cinaminnon and about a 1/2 teaspoon of cloves. I like alot of spice. I added a teaspoon of maple flavoring to the frosting. Yummy

I could not find gluten free, so I made using regular cake mix and added 1 cup water instead of 2/3. I could not taste the maple in the frosting, will probably use more syrup or maple flavoring next time, but still excellent. Took them to work and everyone loved them. Will make again

I made these today with regular ingredients. These were okay. I also used regular chopped walnuts instead of candied. I couldn't taste the maple in the frosting so I recommend using a couple more TBSP. of maple in the frosting.

I haven't tried it yet either, but it sounds delicious. I also would like to know if we can use regular ingredients in it (not gluten free). (sorry I gave a 3 spoon rating...had to give SOME rating before I could post this. I'm sure it's a 5-spoon recipe)
