July 1, 2012

Ingredients

1
large red cooking apple, chopped
1
large tart green apple, chopped
1
medium onion, finely chopped (1/2 cup)
1/4
cup sweetened dried cranberries
1/4
cup honey
1/4
cup cider vinegar
1/2
teaspoon ground cinnamon
1/2
teaspoon salt

Directions

  • 1 In 2-quart saucepan, stir together all ingredients. Heat to boiling over high heat; reduce heat to low. Cook 4 to 8 minutes, stirring frequently, until onion is just tender.
  • 2 Spoon relish into heatproof container; cool to room temperature. Cover tightly and refrigerate. Serve relish chilled or at room temperature.

Expert Tips

Royal Gala and Granny Smith are good choices for the apples in this relish. Peel the apples or leave the peel on, if desired.

Sugar or agave nectar can be substituted for the honey.
