large red apple, cut into fourths, then cut crosswise into thin slices

large pear, cut into fourths, then cut crosswise into thin slices

medium stalk celery, cut diagonally into thin slices (1/2 cup)

oz Havarti cheese, cut into julienne strips

tablespoons olive or vegetable oil
2
tablespoons frozen apple juice concentrate, thawed
3
tablespoons coarsely chopped honey-roasted peanuts
  • 1 In medium salad bowl, mix apple, pear, celery and cheese.
  • 2 In small bowl, thoroughly mix oil and juice concentrate. Pour over apple mixture; toss to coat. Sprinkle with peanuts.

Expert Tips

You can use your favorite cheese instead of the Havarti. Jarlsberg or Cheddar would be nice choices.

Use a mandoline slicer to make quick work of slicing the fruit.

    My family enjoyed this very much. I thing next time I will use a little less cheese. I'll try 3 ounces instead of 4. It was even good the next day although the coating had disolved into the dressing. A keeper!

    I made this for lunch on a very busy Saturday when time was of the essence. It is delicious!! Easy, fast and very tasty. Will be making this for Thanksgiving this year.

    I made this salad for a family get together and everyone loved it, next time I will double the recipe. Munester Cheese was on sale that week so I used it instead of the Havarti.
