cup Fiber One™ Complete pancake mix (from 28.3-oz box)
1/2
cup milk
1/4
teaspoon vanilla
1
small apple, very thinly sliced
1 1/2
teaspoons cinnamon-sugar
Maple-flavored syrup, if desired

Directions

  • 1 Heat oven to 400°F. While oven is heating, melt butter in 9-inch glass pie plate in oven.
  • 2 Meanwhile, in small bowl, beat egg with wire whisk or egg beater. Beat in pancake mix, milk and vanilla. Pour over melted butter in pie plate. Arrange apple slices on batter. Sprinkle with cinnamon-sugar.
  • 3 Bake 15 to 20 minutes or until edges are deep golden brown. Serve warm with maple syrup.

This was so much easier than I expected and it turned out exactly like the picture. I added cinnamon to the pancake batter and used one large gala apple for the apple topping. It was great. I added two slices of bacon as a side and it was perfect. It's a little much for only two people but it doesn't seem to store well. It was amazingly easy.

I thought this was very good. But to make it better I think next time I'm going to layer the apples and cinn/sugar mixture through out the pancake! Topped it with fresh fruit , whip cream and syrup! Yum!

This was good. I'm a Personal Trainer. I had company in town, so I was looking for something that tastes great, but is good for you. I subbed egg beaters for the egg, doubled the recipe (used only 3T of light Country Crock tub butter)and baked in a 9x13 pan. Baked for same cooking time as directed for the single recipe. It turned out great. Next time, I'll add a teaspoon of cinnamon to the batter itself. Oh!...and we topped it with spray butter and sugar free syrup and had egg beaters on the side for more protein.
