Apple-Fennel Lobster Salad

Ingredients

  • 2 packages (6 oz each) refrigerated salad-style imitation lobster
  • 1 red apple, halved, cored, thinly sliced (1 cup)
  • 1 fennel bulb, cut in half, thinly sliced (1 1/4 cups)
  • 1/4 cup golden raisins
  • 1/3 cup mayonnaise or salad dressing
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard
  • 2 tablespoons frozen apple juice concentrate, thawed
  • 4 cups torn romaine lettuce
  • 1/2 cup chopped walnuts, if desired

    In medium bowl, mix imitation lobster, apple, fennel and raisins.

    In small bowl, beat mayonnaise, salt, mustard and apple juice concentrate with wire whisk until well blended. Pour over lobster mixture; toss.

    Among 4 plates, divide lettuce. Top with lobster salad. Sprinkle with walnuts.
