Apple-Date Swirl Cookies

Cooked apples and dates are swirled into a rich brown sugar slice-and-bake cookie.

Ingredients

cup butter or margarine, softened

teaspoon salt

teaspoon ground cinnamon

Apple-Date Filling

1
cup chopped dates
3/4
cup finely chopped peeled apple
1/4
cup granulated sugar
1
teaspoon grated orange peel
1/4
cup orange juice

  • 1 In large bowl, beat 1/2 cup granulated, the brown sugar, butter, vanilla and egg with electric mixer on medium speed, or mix with spoon, until well blended. Stir in flour, baking soda, salt and cinnamon.
  • 2 In 1-quart saucepan, cook all Apple-Date Filling ingredients over medium-high heat, stirring constantly, until mixture boils and thickens. Boil and stir 5 minutes. Cool.
  • 3 Roll or pat dough into rectangle, 16x8 inches, between sheets of waxed paper or plastic wrap. Remove top sheet. Spread dough with cooled Apple-Date Filling. Roll up dough with filling inside, starting with 16-inch side and using waxed paper to lift and roll. Wrap tightly. Refrigerate 2 to 3 hours or until firm.
  • 4 Heat oven to 375°F. Cut roll with sharp knife into 1/4-inch slices, occasionally cleaning off knife. Place about 1 inch apart on ungreased cookie sheet. Bake 8 to 11 minutes or until lightly browned. Remove from cookie sheet to wire rack; cool.

These cookies are delicious! I did make a few key changes though. I did not put the orange zest in the filling, instead I put 1/2 tsp cinnamon. Also, since many people said the dough was hard to roll and crumbly, I rolled it out a bit thinner than the recipe called for and stuck it in the fridge for about 20 min. This REALLY helped the dough stay together when it came time to spread the filling and roll up the cookie. I also put the rolled up cookie in the freezer for 20 min instead of the fridge as well as the knife I was going to use to slice them. Lastly I put just a sprinkling of cinnamon sugar over the tops of the cookies before they went into the oven. Came out DELICIOUS!

Not bad, it was a bit difficult to make. 1 teaspoon of orange zest made the cookies taste too orangy rather than a apple-date flavor, I would omit it or add just a tiny bit. I also advise to put it in the fridge long enough for it to be extra firm because It was difficult to cut to round pieces. The cookies were too soft in the center and stuck to the cookie sheet due to the filling. But in the end everyone enjoyed them, I don't know if I'll go through all that and make them again.

I made these for the first time a few years ago and loved the way they turned out. Just the aroma of the filling when you cook it is enough to make it hard to wait for the finished cookies to come out of the oven. Just a little crisp around the edges and soft and chewy after a day or so of storage.
