Apple Cinnamon Streusel Muffins

Applesauce and cinnamon create a flavorful combination in these streusel muffins made using Bisquick® mix – a delightful bread recipe.

cup chunky applesauce

cup milk

cup vegetable oil

cup packed brown sugar

tablespoons butter or margarine, melted

  • 1 Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray.
  • 2 In large bowl, stir together 4 cups Bisquick mix, 1/2 cup of the granulated sugar and 2 teaspoons of the cinnamon; make well in center of mixture. In small bowl, mix applesauce, milk, oil and eggs; add to dry ingredients, stirring just until moistened. Divide batter evenly among muffin cups, filling almost full.
  • 3 In small bowl, mix 3 tablespoons Bisquick mix, remaining 1/4 cup granulated sugar, remaining 1 teaspoon cinnamon and the brown sugar. Stir in butter until well blended. Sprinkle evenly over batter.
  • 4 Bake 18 to 20 minutes or until toothpick inserted in center comes out clean and tops are golden brown. Cool 5 minutes. Remove from pan to cooling rack. Serve warm, if desired.
