Ingredients

Streusel

1/4: cup packed brown sugar

1/4: cup old-fashioned oats

2: tablespoons chopped walnuts

1: tablespoon butter

Coffee Cake

1: box (15.3 oz) Betty Crocker® Fiber One™ apple cinnamon muffin mix

3/4: cup water

2: tablespoons vegetable oil

2: eggs

Glaze

1/4: cup powdered sugar

1: teaspoon water

Directions

1 Heat oven to 400°F. Spray bottom only of 9-inch round cake pan with cooking spray. In small bowl, mix all streusel ingredients except butter. Cut in butter with fork until mixture is crumbly; set aside.
2 In medium bowl, stir muffin mix, water, oil and eggs just until blended (batter may be lumpy). Spread in pan. Sprinkle with streusel.
3 Bake 24 to 28 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes.
4 In small bowl, mix glaze ingredients until smooth; drizzle over coffee cake. Serve warm or cooled.

I made this coffee cake for my boyfriend to take to his grandparents country home on Thanksgiving. I couldn't find the Fiber One Muffin mix so I had to use cinnamon streusal muffin mix. It worked fine and I didn't have any issues. I used a square glass baking dish and made more of a bread than a cake. It was easy to make and delicious. Everyone loved it!
