Apple Cinnamon Coffee Cake

Streusel

cup packed brown sugar

cup old-fashioned oats

tablespoons chopped walnuts

tablespoon butter

Coffee Cake

box (15.3 oz) Betty Crocker™ Fiber One™ apple cinnamon muffin mix
3/4
cup water
2
tablespoons vegetable oil
2
eggs

Glaze

1/4
cup powdered sugar
1
teaspoon water

  • 1 Heat oven to 400°F. Spray bottom only of 9-inch round cake pan with cooking spray. In small bowl, mix all streusel ingredients except butter. Cut in butter with fork until mixture is crumbly; set aside.
  • 2 In medium bowl, stir muffin mix, water, oil and eggs just until blended (batter may be lumpy). Spread in pan. Sprinkle with streusel.
  • 3 Bake 24 to 28 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes.
  • 4 In small bowl, mix glaze ingredients until smooth; drizzle over coffee cake. Serve warm or cooled.
