Apple-Cinnamon Butternut Squash Soup

Ingredients

cups cubed seeded peeled butternut squash (2 medium)
1
large apple, peeled, chopped
1
large onion, cut into 1-inch pieces

tablespoons packed brown sugar
3/4
teaspoon salt
3/4
teaspoon ground cinnamon
1/8
teaspoon pepper
3
cups Progresso® chicken broth (from 32-oz carton)
3/4
cup milk
1
container (6 oz) Yoplait® Greek Fat Free plain yogurt
2
tablespoons chopped fresh chives

  • 1 In Dutch oven, mix squash, apple, onion, brown sugar, salt, cinnamon and pepper. Add broth. Cover; heat to boiling over medium-high heat. Reduce heat; simmer about 20 minutes or until squash is tender.
  • 2 In blender or food processor, place one-third of mixture. Cover; blend until smooth. Repeat twice to use up remaining soup. Return to Dutch oven, stir in milk and yogurt. Heat over low heat, stirring occasionally, just until heated through. Ladle into bowls; sprinkle with chives.

When selecting butternut squash, look for those that have hard, tough rinds and are heavy for their size. Peeling the squash will be easier if you first microwave it on High for 3 minutes.

Purchase already peeled and cut-up squash if available at your grocery store. If you’re cutting it yourself, a good, swivel-headed vegetable peeler is the tool of choice to make quick work of peeling the squash.

This soup is well worth the effort! It is so tasty! I made recipe exactly as is, and I wouldn't change a thing! I bought squash that was already packaged in large pieces, so it cut down on the preparation time. I chopped the apples,onion, and squash, in my little onion chopper and it cooked up great. Unfortunately I can't get anyone in my family to eat squash, so I will be portioning it out and freezing it for myself. That just means more for me!!

This turned out very delicious! I've never cooked or ate a Butternut Squash before and neither had my test subjects. Everyone really enjoyed it. I gave it 4 spoons for difficulty with the Squash (see below). Other than the few set backs, it's an easy recipe. The squash is a pain to peal and it's best to use gloves when handling it. I had a reaction to it on my left hand only and it was dead skin peeling off, apparently this is somewhat common. I used olive oil to moisturize and it seemed to help, but was sensitive for a couple days. Also use the hint and microwave or bake the squash so you have an easier time cutting it. I didn't use a dutch oven, just a large spaghetti pot with lid and it worked just as well. it was better the next day for sure and the chives are a must!
