This soup is well worth the effort! It is so tasty! I made recipe exactly as is, and I wouldn't change a thing! I bought squash that was already packaged in large pieces, so it cut down on the preparation time. I chopped the apples,onion, and squash, in my little onion chopper and it cooked up great. Unfortunately I can't get anyone in my family to eat squash, so I will be portioning it out and freezing it for myself. That just means more for me!!

This turned out very delicious! I've never cooked or ate a Butternut Squash before and neither had my test subjects. Everyone really enjoyed it. I gave it 4 spoons for difficulty with the Squash (see below). Other than the few set backs, it's an easy recipe. The squash is a pain to peal and it's best to use gloves when handling it. I had a reaction to it on my left hand only and it was dead skin peeling off, apparently this is somewhat common. I used olive oil to moisturize and it seemed to help, but was sensitive for a couple days. Also use the hint and microwave or bake the squash so you have an easier time cutting it. I didn't use a dutch oven, just a large spaghetti pot with lid and it worked just as well. it was better the next day for sure and the chives are a must!

The soup overall has good flavor. Next time I would sautee the onions before adding them to sweeten them up a bit. I also added a touch of nutmeg with the cinnamon.

Very tasty! I roasted the squash and simmered all other ingredients (except) dairy while the squash cooked. I used plain yogurt and it was very tasty, perfect for this time of year!

I roasted the squash first, to make it easier to peel and give it more flavor, and put both chives and nutmeg on top. Made a great start to a winter meal, goes well with a spicy main dish.

I made this for Thanksgiving and everyone loved it! I used plain yogurt instead of the Greek yogurt... I feel that the Greek yogurt is a little too tangy for me in this recipe. Also, I use a VERY large apple or two apples!

I bake the squash first then it just scoops right out of the shell into the pot with the other boiling vegetables. So easy, I have used leftover squash too. This soup is better made a day ahead then reheated. (wait to add the cream until you reheat) Perfect for the Holidays or a special evening!

A couple weeks ago I was CRAVING butternut squash soup. This recipe absolutely hit the spot. The squash is a pain to peel, but it's well worth it. I didn't have large apples, so I used 2 1/2 small ones, and I liked the faint sweet tartness they added. I served it with toasted rosemary olive oil bread.

This soup is absolutely delicious. I made it for the first time yesterday and just about fell over when I sampled it. I was in a soup preparing frenzy (cooked five soups for future dining) and happened to have some heaving whipping cream for a tomato bisque I made. I added about 1/2 cup of it to this recipe. It took me a little longer to prep (35 minutes?) for cooking as the butternut squash is a little labor intensive but well worth the effort. I will make this soup again and again.
