This is my mom's recipe and over time she has adapted it to make it a little bit more healthy.

teaspoon Baking Soda

teaspoon baking powder

cup Finely Shredded Peeled Apple

cup Apple Sauce (no sugar added)

teaspoon Lemon extract or lemon zest

cup Walnuts or Pecans (Optional)
  1. Preheat oven to 350
  2. Mix dry and wet ingredients together in separte bowls. Add wet ingredients to the dry ingredients.
  3. Two baking options: use 3 mini loaf pans bake for 35 minutes use 1 large loaf pan bake for 55 or 60 minutes
