Apple, Blue Cheese and Walnut Salad

Ingredients

Dressing

cup vegetable oil

tablespoons sugar

tablespoons white wine vinegar

tablespoon finely chopped red onion

teaspoon salt
1/2
teaspoon ground mustard
1/4
to 1/2 teaspoon celery seed

Salad

1
large bunch romaine lettuce, torn into bite-size pieces (about 10 cups)

bag (6 oz) fresh baby spinach leaves
1
cup crumbled blue or Gorgonzola cheese (4 oz)
1
cup walnut halves, toasted
2
red apples, cut into bite-size pieces

  • 1 In medium bowl, mix all dressing ingredients with wire whisk until sugar is dissolved (dressing will be thick). Set aside.
  • 2 In very large bowl, mix salad ingredients. Pour dressing over salad; toss to coat. Serve immediately.

I made this yesterday with my ham for Easter dinner. Guests were getting seconds and I was asked for the recipe. All ingredients go very well together. I did toss my apple chunks in some lemon juice so they didn't brown. I also substitute stevia in place of sugar in the dressing because of the high calorie count to make it more healthy
