Apple, Blue Cheese and Walnut Salad

Serve your family with this apple salad that’s made with lettuce, spinach and nuts – a wonderful side dish.

Ingredients

Dressing

1/2
cup vegetable oil

tablespoons sugar

tablespoons white wine vinegar

tablespoon finely chopped red onion

teaspoon salt
1/2
teaspoon ground mustard
1/4
to 1/2 teaspoon celery seed

Salad

1
large bunch romaine lettuce, torn into bite-size pieces (about 10 cups)

bag (6 oz) fresh baby spinach leaves

cup crumbled blue or Gorgonzola cheese (4 oz)

cup walnut halves, toasted
2
red apples, cut into bite-size pieces

Directions

  • 1 In medium bowl, mix all dressing ingredients with wire whisk until sugar is dissolved (dressing will be thick). Set aside.
  • 2 In very large bowl, mix salad ingredients. Pour dressing over salad; toss to coat. Serve immediately.

Expert Tips

Apples that have a bit of tartness are perfect in this salad because the dressing is sweet.
