Ingredients

Cake and Frosting

box Betty Crocker® SuperMoist® white cake mix
Water, vegetable oil and egg whites called for on cake mix box
1
container Betty Crocker® Whipped fluffy white frosting
1/2
cup flaked coconut

Orange-Coconut Filling

1/4
cup sugar
2
teaspoons cornstarch
1/3
cup water
1
teaspoon grated orange peel
2
teaspoons orange juice
2
tablespoons flaked coconut

  • 1 Heat oven to 350°F (325°F for dark or nonstick pans). Make, bake and cool cake as directed on box for two 8-inch or 9-inch round pans.
  • 2 To make orange-coconut filling, in small microwavable bowl, mix sugar and cornstarch. Gradually stir in 1/3 cup water. Stir in orange peel and orange juice. Microwave uncovered on High about 1 minute or until mixture thickens and boils; stir. Microwave 30 seconds longer, stirring every 15 seconds. Stir in 2 tablespoons coconut; cool.
  • 3 Fill cake layers with orange-coconut filling. Frost side and top of cake with frosting. Sprinkle 1/2 cup coconut over top. Store loosely covered.

If you love the warm, nutty flavor of toasted coconut, you can toast it before sprinkling on top. To toast coconut, sprinkle it in an ungreased heavy skillet and cook over medium-low heat 6 to 14 minutes, stirring frequently until browning begins, then stirring constantly until golden brown.

My family and I really enjoyed this recipe. I will definitly make it again, but the next time I do, I''d like to incorporate more fruit to it. (Maybe strawberries inside and on top; and after that, I''d try it as achocolate cake with chocolate frosting, toasted coconut andblackberries). The only complaints I had were that I needed to remake the filling twice because the recipe didn''t give a very accurate thickening time. (adding about 45 seconds to the first time -or until it was satisfactorily thickened- and 25 seconds to both of the next turns in the microwave.) and that it left us desiring more fruit.I thought that this recipe was definately improved by the coconut being toasted, and it''s excellentwith a little ice cream on the side; we alsopreferred it chilled much more than right after the first cooling.

This cake is the favorite in my home...and i get requests for it at family gatherings... everyone just loves it! I have also turned it into a three layer cake and it gets more of the filling in the picture...it is a good variation... plus i have some who dont care for the coconut and so i remove it from the filling recipe and then put a bowl of coconut out for the others to sprinkle on their own pieces... it works out great!!! This recipe is a wonderful find. It will stay in my cookbook for years to come.
