Ingredients

Cookies

1/2
cup butter or margarine, softened
1
package (7 or 8 oz) almond paste (not marzipan)
1
egg
1
pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
1
tablespoon water
24
unblanched whole almonds

Icing

1/2
cup powdered sugar
1/4
teaspoon almond extract
1
tablespoon water

Directions

  • 1 Heat oven to 375°F. In large bowl, beat butter and almond paste with electric mixer on medium speed until well blended. Beat in egg until well blended. Stir in cookie mix and 1 tablespoon water until soft dough forms.
  • 2 Using cookie scoop (2-tablespoon size), drop dough by level scoopfuls 2 inches apart onto ungreased cookie sheets. Press 1 almond in center of each mound of dough.
  • 3 Bake 12 to 14 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.
  • 4 In small bowl, mix icing ingredients until smooth. Drizzle icing over cookies.

Considering the costs of the ingredients to make these, I think I will have to pass on this recipe... a very expensive 2 dozen cookies!

TOO EXPENSIVE, TOO FATTENING! I'm sure these cookies are great but I won't ever know unless two things happen: the Recession ends and I stop caring about my weight. I was all excited about this recipe at first because it has two of my favorite things: oatmeal and almonds. I purchased almonds (which I do whether or not I was making this recipe) and the almond extract at a local farmer's market to save money but just those two ingredients were $8. Then when I went to Publix and saw how much the almond extract was for just one small can: $5.55 plus the $2.69 Betty Crocker Oatmeal Cookie Mix, I realized that after it was all said and done I'd be spending around $20 for 24 cookies. These had better be some really great cookies, because in these times that is a LOT of money to spend on 24 cookies. Also, from a nutritional standpoint, they are very fattening. So I had to pass. I hope they are as good as the time and money spent warrant. They sure look tasty. Maybe one day I'll find out.
