Using my Cuisinart really made this an easy recipe. Here's how I did it. For cookie base, mixed egg first, then added butter, almond extract and cookie mix in that order. Mixed quickly.
Wiped out bowl. Chopped apricots; removed. Processed almond paste, cut in 1-inch chunks,and sugar. Added remaining filling ingredients [used all 8-oz pkg cream cheese] and processed until smooth; then added the apricots just until mixed in.
The vanilla chip ganache topping was made per recipe. Definitely decadent, but were good even a few days later!
