Ingredients

packages (7 oz each) small pasta shells
2
tablespoons butter or margarine
1/4
cup Gold Medal® all-purpose flour
1/2
teaspoon salt
1/2
teaspoon ground mustard
1/4
teaspoon pepper
2
cups half-and-half
3
cups shredded Cheddar cheese (12 oz)
4
medium green onions, sliced (1/4 cup)
1/4
cup chopped red bell pepper

Directions

  • 1 Cook and drain pasta as directed on package.
  • 2 Meanwhile, in 3-quart nonstick saucepan, melt butter over low heat. Stir in flour, salt, mustard and pepper. Cook over low heat 20 seconds, stirring constantly, until butter is absorbed. Remove from heat; gradually beat in half-and-half with wire whisk. Heat to boiling over medium heat, stirring constantly. Boil and stir 1 minute. Stir in cheese until melted.
  • 3 Stir pasta, onions and bell pepper into sauce. Cook, stirring constantly, until hot.

i just made this mac and chesse an it was so very simple to do,also it had a very diffence taste to it, i change it up a little bit by adding mild and sharp chadder to it.

I made this last night. I absolutely love the veggies in this. However I will do some tweaking next time. The mac came out very thick. so I might cut down the 1/2 and 1/2 with some milk or make less of a rue... we'll see. I also thought it needed more cheese. Maybe 3 1/2 cups would do. But overall , good flavor and great texture.

Not bad if you need a quick fix dinner, but not my favorite recipe. Decent, and very easy... My 5 yr old loved it... But I was not thrilled. The sauce didn't turn out as creamy as I like it in mac and cheese, and the dish is overall a little bland. The peppers and onions add a little something to it, but I thought it fell short of my expectations.
