I made this last night. I absolutely love the veggies in this. However I will do some tweaking next time. The mac came out very thick. so I might cut down the 1/2 and 1/2 with some milk or make less of a rue... we'll see. I also thought it needed more cheese. Maybe 3 1/2 cups would do. But overall , good flavor and great texture.

Not bad if you need a quick fix dinner, but not my favorite recipe. Decent, and very easy... My 5 yr old loved it... But I was not thrilled. The sauce didn't turn out as creamy as I like it in mac and cheese, and the dish is overall a little bland. The peppers and onions add a little something to it, but I thought it fell short of my expectations.

This is one of the easiest meals I make in my house. I like to use spicy mustard (like for hot dogs) over the dry mustard. Just a little extra kick picks the flavors of the cheese!

Love m & c! I added crushed red pepper (we like comfort food with a zing!)and blue cheese crumbles we had on hand (we buy it in bulk at Sam's so it's always around to add to salads, soups, AND mac & cheese!!). I also added a tsp of freshly prepared horseradish from the frig. EXTRA YUM!! Thanks for the base and an idea for a quick, easy lunch for me to make for my hubby when he came home from work at lunch time!

My family loves this recipe. I have used a number of times now, and even my extremely picky husband eats plenty of it. The only problem I have found is it comes out a little tart, but nothing a little sprinkle of brown sugar wont fix. Today we are experimenting with some bbq sauce and hot dogs! I also Like to throw in different veggies to mix things up a bit.
