|
| 1/3 | cup vegetable oil |
| 1/4 | teaspoon grated lime peel |
| 2 | tablespoons lime juice |
| 1 | tablespoon honey |
|
| 2 | mangoes or papayas, peeled, pitted and sliced |
| 1/2 | honeydew melon, peeled, seeded and thinly sliced |
| 2 | cups watermelon balls |
| 3/4 | cup seedless red grape halves |
| Watercress, if desired |
| 1. | In tightly covered container, shake all dressing ingredients until well blended. |
| 2. | Arrange fruits on 6 plates. Drizzle with dressing. Garnish with watercress. |
|
| You can use any type of salad green in place of the watercress. Try green leaf lettuce or fresh spinach leaves for a pretty salad garnish. |
|
| You don’t have to buy special equipment to make watermelon balls. A small ice-cream or cookie-dough scoop will do the job! |
