Rio Grande Melon Salad

Mangoes, melons and grapes are arranged and drizzled with a honey-lime dressing. Fresh fruit has never tasted better!

Honey-Lime Dressing
1/3cup vegetable oil
1/4teaspoon grated lime peel
2tablespoons lime juice
1tablespoon honey
Salad
2mangoes or papayas, peeled, pitted and sliced
1/2honeydew melon, peeled, seeded and thinly sliced
2cups watermelon balls
3/4cup seedless red grape halves
Watercress, if desired
1.In tightly covered container, shake all dressing ingredients until well blended.
2.Arrange fruits on 6 plates. Drizzle with dressing. Garnish with watercress.

Substitution
You can use any type of salad green in place of the watercress. Try green leaf lettuce or fresh spinach leaves for a pretty salad garnish.
Success
You don’t have to buy special equipment to make watermelon balls. A small ice-cream or cookie-dough scoop will do the job!
