Sprinkle bottom half of focaccia with 1 cup of the cheese. Spread vegetables over cheese. Sprinkle with remaining cheese.

Focaccia, an Italian bread shaped into a large, flat round, is often drizzled with olive oil and topped with Parmesan cheese before baking.
Purchasing
Look for focaccia in the bakery, deli or frozen-food section of the grocery store.
Substitution
Using already-shredded mozzarella cheese is certainly easy. For slightly different Italian flavor, shred provolone cheese, which has a slightly smoky flavor, or Fontina cheese, which has a subtle nutty flavor.
