1/2cup diced provolone or mozzarella cheese (2 oz)
1/2cup Green Giant® Valley Fresh Steamers™ frozen Niblets® corn
2tablespoons chopped fresh chives
2tablespoons chopped fresh parsley
1/4teaspoon salt
1/4teaspoon pepper
1/2cup diced cooked ham (2 oz)
1tablespoon butter or margarine

Total Time: 30 min
1.In medium bowl, beat all ingredients except ham and butter with fork or wire whisk until well mixed. Stir in ham.
2.In 10-inch nonstick skillet, melt butter over medium-low heat. Pour egg mixture into skillet. Cover; cook 14 to 17 minutes or until eggs are set in center and light brown on bottom. Turn upside down onto serving plate.
Make the Most of This Recipe
Substitution
You can use any of your favorite semi-hard cheeses in this egg dish. Cheddar, Monterey Jack and Swiss are all good choices.
Time Saver
Look for packaged diced cooked ham in the meat department of the grocery store. You may want to cut it into smaller pieces if some of them look too big.
