Ground Beef Stew over Garlic Mashed Potatoes

From Betty's Soul Food Collection... The gang’s all here, so make dinner special with ground beef simmered in a delicious sauce and then topped with everyone’s favorite—garlic mashed potatoes.

1/2lb lean (at least 80%) ground beef
1/4cup chopped onion
1cup Green Giant® Valley Fresh Steamers™ frozen mixed vegetables
1can (14.5 oz) diced tomatoes, drained
1jar (12 oz) beef gravy
1/4teaspoon dried marjoram leaves
1/4teaspoon pepper
1cup water
2tablespoons butter or margarine
1/2teaspoon garlic salt
1/2cup milk
1 1/3cups Betty Crocker® Potato Buds® mashed potatoes (dry)
1tablespoon chopped fresh parsley
1.In 12-inch nonstick skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain.
2.Stir in mixed vegetables, tomatoes, gravy, marjoram and pepper. Heat to boiling. Reduce heat to low; simmer uncovered 8 to 10 minutes, stirring occasionally, until vegetables are tender.
3.In 2-quart saucepan, heat water, butter and garlic salt to boiling. Remove from heat; add milk. Stir in dry potatoes and parsley. Let stand about 30 seconds or until liquid is absorbed.
4.Fluff potatoes with fork. Serve beef mixture over potatoes.
High Altitude (3500-6500 ft): No change.

Substitution
Oregano can be used in place of the marjoram; both are mint-family herbs from the Mediterranean mountains.
Variation
In place of the potatoes, try this thick, rich stew over biscuits, rice or pasta.
