Grilled Garlic-Sage Pork Roast

8cloves garlic, finely chopped
3tablespoons chopped fresh sage leaves
2tablespoons olive or canola oil
1/2teaspoon salt
1/4teaspoon pepper
1boneless center-cut pork loin roast (1 1/2 lb)

1.Heat gas or charcoal grill. In small bowl, stir together garlic, sage, oil, salt and pepper. Rub garlic mixture over pork.
2.Carefully brush oil on grill rack. Place pork on grill over medium heat. Cover; cook 35 to 40 minutes, turning occasionally, until meat thermometer inserted into center of pork reads 155°. Remove from grill; cover with foil and let stand 5 minutes until thermometer reads 160°F.
3.To serve, cut pork across grain into thin slices. Garnish with additional fresh sage leaves if desired.
Roast Directions: Heat oven to 400ºF. Place pork on rack in shallow roasting pan. Insert meat thermometer so tip is in thickest part of pork and does not rest in fat. Bake 50 to 60 minutes or until meat thermometer reads 155°F. Remove from oven; cover with foil and let stand 5 minutes until thermometer reads 160°F.
