Cuban Rub
2tablespoons grated lime peel
1tablespoon cumin seed
1tablespoon cracked black pepper
1/2teaspoon salt
2tablespoons olive or vegetable oil
1clove garlic, finely chopped
Pork Chops
4boneless pork loin or rib chops, about 1 inch thick (about 2 pounds)
Mango slices, if desired

Total Time: 1 hour 15 min
1.Heat coals or gas grill for direct heat. Remove excess fat from pork. In small bowl, mix all Cuban Rub ingredients; rub evenly on both sides of pork.
2.Cover and grill pork 4 to 6 inches from medium heat 8 to 10 minutes, turning frequently, until pork is no longer pink and meat thermometer inserted in center reads 160°F. Garnish with mango slices.

Substitution
No cumin seed? Use 1 teaspoon ground cumin.
Serve With
Round out these flavor-packed pork chops with corn on the cob and cooked rice tossed with black beans.
Variation
