Garlic Beef Bruschetta

A few easy ingredients on toasted French bread spells yum for a quick-fix potluck or picnic appetizer.

1loaf French bread, cut into thirty 1/4- to 1/2-inch slices
2tablespoons olive or vegetable oil
1/2cup soft cream cheese with roasted garlic
8ounces thinly sliced cooked deli roast beef
1/4teaspoon coarsely ground pepper
4roma (plum) tomatoes, thinly sliced
8medium green onions, sliced (1/2 cup)
1.Heat oven to 375ºF. Brush both sides of bread slices with oil. Place on ungreased cookie sheet. Bake about 5 minutes or until crisp. Cool 5 minutes.
2.Spread cream cheese over each slice. Top with beef; sprinkle with pepper. Top each with tomato slice and onions.

Do-Ahead Tip
The bread can be toasted up to a day ahead of time. Store loosely covered at room temperature.
Variation
Use sliced smoked turkey breast instead of the roast beef.
Substitution
Any savory-flavored cream cheese, such as cream cheese with chives and onions, can be used in place of the roasted garlic cream cheese.
Special Touch
Sprinkle drained capers over the cream cheese.
