Easy Spanish Rice

The name says it all. You can toss this spicy rice dish together in no time!

1cup uncooked regular rice
1medium onion, chopped (1/2 cup)
2tablespoons vegetable oil
2 1/2cups water
1can (8 ounces) tomato sauce
1small green bell pepper, chopped (1/2 cup)
1 1/2teaspoons salt
3/4teaspoon chili powder
1/8teaspoon garlic powder
1.Cook rice and onion in oil in 10-inch skillet over medium heat about 3 minutes, stirring occasionally, until rice is golden brown and onion is tender.
2.Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer about 30 minutes, stirring occasionally, until rice is tender.

Substitution
Out of garlic powder? If you have garlic salt on hand, use it instead. Decrease regular salt to 1/2 teaspoon, adding more if needed when the dish is done.
Variation
Turn this great side dish into an easy main dish by adding a pound of ground beef, sausage or turkey, cooked and crumbled.
