Caribbean Lime Coolers

1pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/2cup coconut
1tablespoon grated lime peel (about 1 lime)
3tablespoons lime juice
6tablespoons butter or margarine, melted
1egg
1/4cup powdered sugar
1.Heat oven to 350°F. In large bowl, stir cookie mix, coconut, lime peel, lime juice, butter and egg until soft dough forms.
2.Drop dough by level tablespoonfuls 2 inches apart onto ungreased cookie sheets.
3.Bake 9 to 13 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheet. Cool completely, about 15 minutes.
4.With small strainer, sift powdered sugar over cooled cookies. Store covered at room temperature.
High Altitude (3500-6500 ft): Bake 13 to 17 minutes.

How-To
Use a #70 or 1-tablespoon spring-loaded ice cream scoop to make quick work of dropping the cookie dough. Using a scoop also ensures cookies will be the same size and will bake the same length of time.
