Brownies with Grilled Fruit

1box (1 lb 6.5 oz) Betty Crocker® Original Supreme brownie mix
Water, vegetable oil and eggs called for on brownie mix box
1/4cup butter or margarine, melted
3tablespoons orange juice
2tablespoons packed brown sugar
1medium pineapple (3 lb), peeled, cut into 1-inch chunks (3 cups)
3medium mangoes, cut lengthwise in half, pitted and cut into 1-inch chuncks (3 cups)
4medium firm bananas, cut into 1-inch slices (3 cups)
1cup caramel topping
1.Heat oven to 350°F. Line 13x9-inch pan with foil, letting foil hang 2 inches over short ends of pan. Grease bottom only of foil with cooking spray or shortening. Make and bake brownies as directed on box for 13x9-inch pan, using water, oil and eggs. Cool completely, about 1 hour.
2.Heat gas or charcoal grill. In small bowl, mix butter, orange juice and brown sugar.
3.On each of 24 (10-inch) skewers, thread pineapple, mango and banana pieces alternately, leaving space between each piece. Brush butter mixture over fruit. Place skewers on grill over medium-low heat. Cook uncovered 10 to 15 minutes, turning frequently and brushing with butter mixture, until fruit is lightly browned.
4.Remove brownies from pan by lifting with foil; peel away foil. Cut brownies into 4 rows by 3 rows; cut each brownie in half diagonally. To serve, arrange 2 brownie triangles on each plate. Remove fruit from skewers and arrange around and over brownies. Drizzle with caramel topping.

Buy “green tip” bananas, which are ripe but still firm enough to withstand grilling.

If using bamboo skewers, soak in water at least 30 minutes before using to prevent burning.
