Peanut Dressing
1/2cup Italian dressing
2tablespoons peanut butter
1tablespoon soy sauce
Coleslaw
1bag (16 ounces) coleslaw mix
1can (11 ounces) mandarin orange segments, drained
1small jicama (about 1 pound), peeled and cut into 1/2-inch cubes (2 cups)
1/2cup peanuts
1.In small bowl, mix all dressing ingredients with wire whisk until smooth.
2.In large bowl, toss coleslaw mix, orange segments and jicama. Toss with dressing. Sprinkle with peanuts.

You can also use 4 cups of shredded cabbage instead of the bag of coleslaw mix.
