Cheesy Chicken Enchilada Soup
I made this soup but put it in the crock pot. It took a bit to heat up, but when it did it seemed to have cooked out the flavor of the enchilada sauce. I modified the recipe and used 2 cups of Mexican flavored cheese and used the 2 bags of the Southwestern style chicken strips instead of the frozen ones. Also, right before serving, I added another can of enchilada sauce which made it very GOOD... I was surprised at how easy it was and tasty.. Might be better to add a Nacho Cheese flavored soup instead of 2 cans of cream of chicken for added flavor..
